Low Carb Chicken Flautas

Ingredients (Makes 4 Servings)
2 cups shredded rotisserie chicken
4 low-carb tortillas (Mission, La Banderita, or similar)
1/2 cup shredded Mexican blend or cheddar cheese
1/4 cup cream cheese (softened)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp cumin
1/4 tsp salt
1 tbsp olive oil or avocado oil (for brushing)
Optional Toppings & Dips:
Guacamole
Salsa
Greek yogurt or sour cream
Chopped cilantro
Instructions
1. Preheat & Prep
Preheat oven to 400°F (or air fryer to 375°F). Lightly grease a baking sheet or air fryer basket.
2. Mix the Filling
In a bowl, combine shredded rotisserie chicken, cream cheese, shredded cheese, and spices. Mix well.
3. Assemble the Flautas
Spoon ¼ of the filling onto the bottom third of each tortilla. Tightly roll the tortilla and place it seam-side down on the baking sheet.
4. Bake or Air Fry
Oven: Brush lightly with olive oil and bake for 12-15 minutes, flipping halfway, until crispy.
Air Fryer: Spray lightly with oil and air fry for 8-10 minutes, flipping once.
5. Serve & Enjoy!
Top with fresh cilantro, guacamole, or salsa, and serve with a side of Greek yogurt or sour cream.
