Ingredients (Makes 12 Blondies)

  • 2 cups almond flour

  • 1 teaspoon baking powder

  • 1 teaspoon xanthan gum

  • 1 cup golden monk fruit sweetener or brown sugar stevia

  • 2 large eggs

  • 1/2 cup butter, softened

  • 1 teaspoon vanilla extract

  • 1/2 cup stevia chocolate chips

Instructions

1. Preheat & Prep
Preheat oven to 350°F and line an 8x8-inch baking dish with parchment paper.

2. Mix Dry Ingredients
In a bowl, whisk together almond flour, baking powder, and xanthan gum. Set aside.

3. Cream Butter & Sweetener
In another bowl, beat together softened butter and golden monk fruit sweetener until light and fluffy. Add in eggs and vanilla extract, mixing until smooth.

4. Combine & Fold in Chocolate Chips
Gradually add dry ingredients to the wet mixture, stirring until well combined. Gently fold in stevia chocolate chips.

5. Bake
Spread batter evenly in the prepared baking dish and bake for 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out with a few moist crumbs.

6. Cool & Slice
Let cool completely before slicing into 12 blondies. Enjoy!
