Ingredients:

For the Blackened Chicken:

  • 2 teaspoons kosher salt

  • 2 teaspoons chili powder

  • 1 teaspoon black pepper

  • ½ heaping teaspoon cumin

  • ½ teaspoon coriander

  • ¼ teaspoon red pepper flakes

  • 2 tablespoons mayo (I love Primal Kitchen’s mayo)

For the Sweet Potatoes:

  • 1 pound sweet potatoes

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • ½ teaspoon onion powder

  • ½ teaspoon garlic powder

  • ½ teaspoon chili powder

  • ½ teaspoon nutritional yeast

For the Hot Honey Dressing:

  • ¼ cup olive oil

  • ¼ cup Dijon mustard

  • 2 tablespoons sugar-free honey or sugar-free syrup (ChocZero, Wholesome Yum, Maple Grove Farms are great options)

  • 2 tablespoons apple cider vinegar

  • ½ teaspoon kosher salt

  • 1 teaspoon red pepper flakes

For the Cabbage-Carrot Slaw:

  • 4 cups cabbage, thinly sliced

  • 1 ½ cups shredded carrot

  • ¼ cup mayonnaise

  • 1 tablespoon Dijon mustard

  • 1 tablespoon sugar-free honey or sugar-free syrup

  • 2 tablespoons apple cider vinegar

  • 1 teaspoon kosher salt

  • 1 teaspoon dried parsley

  • ¼ teaspoon black pepper

  • Juice of a lime

Directions:

Blackened Chicken:

  1. Prep the Chicken: Start by preheating your skillet to medium-high. In a large bowl, mix the olive oil, balsamic vinegar, kosher salt, chili powder, black pepper, cumin, coriander, and red pepper flakes.

  2. Marinate: Coat the chicken breasts or thighs with the mixture, ensuring they are fully covered. Let it marinate for at least 15 minutes up to overnight for best flavor.

  3. Cook: Sear the chicken on both sides until blackened and cooked through, about 5-7 minutes per side. Remove from heat and let rest before slicing.

Sweet Potatoes:

  1. Prep the Potatoes: Pre-heat your oven to 400 F. While the chicken is marinating, peel and cube the sweet potatoes.

  2. Season: Toss the sweet potatoes in a bowl with olive oil, salt, onion powder, garlic powder, chili powder, and nutritional yeast.

  3. Roast: Spread the sweet potatoes on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and slightly crispy on the edges.

Hot Honey Dressing:

  1. Mix: In a small bowl, whisk together the olive oil, Dijon mustard, sugar-free honey (or sugar-free syrup), apple cider vinegar, kosher salt, and red pepper flakes until well combined. Set aside.

Cabbage-Carrot Slaw:

  1. Combine: In a large bowl, combine the thinly sliced cabbage and shredded carrots.

  2. Dress: In a separate bowl, mix the mayonnaise, Dijon mustard, sugar-free honey (or sugar-free syrup), apple cider vinegar, kosher salt, dried parsley, black pepper, and lime juice.

  3. Toss: Pour the dressing over the cabbage and carrots, tossing to coat evenly.
