A Flavor-Packed, Nutritious Delight for Your Taste Buds
If you're a fan of SweetGreen's Hot Honey Chicken Bowl, you're in for a treat! This copycat recipe brings all the flavors you love right into your kitchen. It's packed with nutritious ingredients and bursts of flavor, perfect for a satisfying meal any day of the week. Let’s dive into making this delicious bowl step by step. I took this an extra step to avoid the sugar and used sugar-free honey from Wholesome Yum.
Ingredients:
For the Blackened Chicken:
2 pounds chicken breast or thighs
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 teaspoons kosher salt
2 teaspoons chili powder
1 teaspoon black pepper
½ heaping teaspoon cumin
½ teaspoon coriander
¼ teaspoon red pepper flakes
2 tablespoons mayo (I love Primal Kitchen’s mayo)
For the Sweet Potatoes:
1 pound sweet potatoes
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon chili powder
½ teaspoon nutritional yeast
For the Hot Honey Dressing:
¼ cup olive oil
¼ cup Dijon mustard
2 tablespoons sugar-free honey or sugar-free syrup (ChocZero, Wholesome Yum, Maple Grove Farms are great options)
2 tablespoons apple cider vinegar
½ teaspoon kosher salt
1 teaspoon red pepper flakes
For the Cabbage-Carrot Slaw:
4 cups cabbage, thinly sliced
1 ½ cups shredded carrot
¼ cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon sugar-free honey or sugar-free syrup
2 tablespoons apple cider vinegar
1 teaspoon kosher salt
1 teaspoon dried parsley
¼ teaspoon black pepper
Juice of a lime
Directions:
Blackened Chicken:
Prep the Chicken: Start by preheating your skillet to medium-high. In a large bowl, mix the olive oil, balsamic vinegar, kosher salt, chili powder, black pepper, cumin, coriander, and red pepper flakes.
Marinate: Coat the chicken breasts or thighs with the mixture, ensuring they are fully covered. Let it marinate for at least 15 minutes up to overnight for best flavor.
Cook: Sear the chicken on both sides until blackened and cooked through, about 5-7 minutes per side. Remove from heat and let rest before slicing.
Sweet Potatoes:
Prep the Potatoes: Pre-heat your oven to 400 F. While the chicken is marinating, peel and cube the sweet potatoes.
Season: Toss the sweet potatoes in a bowl with olive oil, salt, onion powder, garlic powder, chili powder, and nutritional yeast.
Roast: Spread the sweet potatoes on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and slightly crispy on the edges.
Hot Honey Dressing:
Mix: In a small bowl, whisk together the olive oil, Dijon mustard, sugar-free honey (or sugar-free syrup), apple cider vinegar, kosher salt, and red pepper flakes until well combined. Set aside.
Cabbage-Carrot Slaw:
Combine: In a large bowl, combine the thinly sliced cabbage and shredded carrots.
Dress: In a separate bowl, mix the mayonnaise, Dijon mustard, sugar-free honey (or sugar-free syrup), apple cider vinegar, kosher salt, dried parsley, black pepper, and lime juice.
Toss: Pour the dressing over the cabbage and carrots, tossing to coat evenly.
Assemble the Bowl:
Layer: In a serving bowl, start with a base of roasted sweet potatoes.
Add Chicken: Top with slices of the blackened chicken.
Slaw: Add a generous scoop of the cabbage-carrot slaw.
Drizzle: Finish with a drizzle of the hot honey dressing.
Nutritional Benefits:
Blackened Chicken: Packed with protein and flavor, the chicken provides essential amino acids and a hearty main component.
Sweet Potatoes: Rich in fiber, vitamins A and C, and antioxidants, sweet potatoes add a sweet, nutritious base.
Hot Honey Dressing: This dressing adds a perfect spicy-sweet balance while being a source of healthy fats and vitamins.
Cabbage-Carrot Slaw: Full of crunch and color, this slaw is high in fiber, vitamins, and minerals, making it a refreshing and healthy addition.
Enjoy this delightful, nutritious bowl that’s sure to satisfy your taste buds and keep you energized throughout the day. Whether you're a fan of SweetGreen or just looking for a new, tasty meal, this hot honey chicken bowl is a must-try!
